Stick one genre so that people know what to expect. You may even consider doing themes.
Try to pick books that are fun to read, and try to stick to best sellers. That way people will be more interested in reading the books you suggest.
Use Facebook to let your friends know about the book club. Create a page for your book club - share it on your wall and send invitations to your friends to join - at least to those you think will be interested. You can also use Facebook Events to let your friends know when the next meeting is, and be sure to pick a venue that's popular - like a bookstore or coffee shop.
Also use meetup.com to reach out to other people. Any time you create an event on Facebook, do the same on meetup.com.
Give people enough time to read. Space the meetings at least one month apart.

If you're doing one with friends, then I suggest you all sit together and decide on a book you all are okay with reading so that one (or more) people don't feel obligated to read something they absolutely hate. Try and find a date and time that works best with everyone's schedules. Meetings should take place once a month. If you're meeting at someone's house, make sure everyone has a ride to get there. During the book club, the host(ess) can provide light snacks such as cookies, and drinks. Or every member of the book club can bring a small dish each. Once everyone has completed the book, then the meeting can proceed. Discuss the book. What you liked about it, what you didn't like, which characters irritated you, how you would have reacted differently to certain scenarios.
